Luo Han Guo Soup
Luo Han Guo soup is one of my favorite soup to boil. It has many benefits like intense sweetness but non-caloric, weight loss, Low glycemic index, anti-inflammation, immune enhancement, fully water-soluble, anti-oxidant, anti-cancer and anti-diabetic.

Chinese traditional medicine has always used luo han guo fruit to treat coughs, sore throat and combat phlegm. Luo han guo is also naturally sweet, so it gives a sweet taste to this soup. (If you don’t like watercress, you may add addition luo han guo for more fragrance.Of all the different types of soups, I find this soup the hardest to snap as it is so dark-coloured. I seek your understanding not to put off by the appearance of the soup as showed in the photo. Don't judge its appearance, the soup tastes natural sweetness and soothing. :D

1. Gently crack open the luo han guo fruit. Tips: If you have a soup stock bag, you can place the smashed fruit inside the bag.
2. In Ecoramic pot, add water, red dates, luo han guo fruit and watercress (optional). Bring to a boil, with lid closed for about 20 minutes.
3. Prior to turn off the fire, add wolfberries. Season with salt. 
4. Serve the soup with steamed rice. Or drink as soup.
