According to Chinese Herbology, foods have either ‘yin’ and ‘yang’ properties. Yin foods have ‘cooling’ properties and on other hand, yang foods, have ‘heaty’ properties. Some foods are ‘neutral’. In Ancient times, the Chinese folks believed that proper diet plays an important part in acheiving a balanced ying & yang quotient for an individual.
In Singapore, it is warm & humid all year round plus other factors like stress, climate, demanding environment and lifestyle. Consuming Yin foods to counter the ‘heatiness’ – having home-cook soup like Old Cucumber Soup – is definitely a MUST. This soup is also beneficial for those in other countries who are experiencing summer. :DThis is another simple soup that I boiled. Using the new Ecoramic Pot, it take lesser time and I don't have to worry about overflow issue :D
Ingredients
(Serves 4)
- One small to medium size Chinese Old Cucumber
- 1.5 litres of water
- 8 red dates
- 6 dried scallops
- 200g pork ribs
- 2 piece dried cuttlefish & few Dried-Sun Fish
- 1 sweet corn, cut to small pieces
- 1 medium carrot, peeled and cut to small pieces
- salt, to taste
Directions
Scoop Out The Seeds
1. Scrub the skin of the old cucumber clean and cut it in half, length-wise. Scoop out the seeds using a spoon. Cut into smaller chunks.
2. In a small pot, blanch the pork ribs in boiling water for a few minutes (so as to remove the scum bits). Drain the pork ribs and set aside.
3. In a soup pot, add all the blanched pork, water, red dates, dried scallops, dried cuttlefish, dried sun fish, sweet corn and carrots. Bring to a boil, then reduce heat and simmer the soup over low heat for about 10 minutes. Season with salt to taste.

ReplyDeleteI did not spot any cracks, it is easy to spot anyway because of the bright and shine inner and exterior. By far i will say the packing is very well done. Bubble warps everywhere (http://superbmothers.blogspot.com/2011/10/kitchen-art-ecoramic-ceramic-pot-series.html). Since the pot is die cast, the changes of crack is lesser but dents are possible is not handle well
